Barbara's Pineapple Cheese Cake
1 env. unflavored gelatin
1.c. canned Pineapple juice heated to boiling
2[8 oz ] pkgs.cream cheese; softened
1 tsp.vanilla extract [optional]
9 inch graham cracker crust in large bowl mix gelatin with sugar.
Add hot juice and stir until gelatin is completely dissolved [5 minutes] with electric mixer.
Beat cream cheese and vanilla until smooth.
Pour into crust; chill until smooth. Enjoy.

Coconut- Cream Cheese Pound Cake
1/2 cup of Butter
1/2 cup shortening
1 (8oz.) Package of Cream Cheese. Softened
3 cups Sugar
6 large eggs
3 cups of all-purpose flour
1/4 tsp. baking soda
1/4 tsp. alt
1 (6 oz.) package frozen grated coconut. thawed
1 tsp. vanilla extract
1 tsp. coconut extract
Garnish toasted coconut .
Beat the first Three ingredients together until soft and creamy; gradually add sugar,beating a6t medium speed 5 to 7 minutes. Add eggs, one at time, beating just until the yellow appears.
Combine flour,soda,and salt; add to butter mixture. Mix at slow speed until blended. Stir in coconut and flavorings. Pour Batter into a greased and floured 10 inch Bundt cake pan or tube pan. Bake at 325 degrees for about an hour.let cool for 15 minutes and garnish to your liking. Enjoy
